Last week I talked about how cooking is one of my favorite ways to celebrate family holidays and birthdays. I am no Martha while in an apron (yet), but have been cooking a lot more recently thanks to my new toy. I thought I would share a couple more recipes for your mom’s special day since I have a few new dishes I’ve been addicted to.
So since I covered a dinner recipe idea for next weekend, let’s move on to lunch. I have been loving this simple zoodle recipe lately. So easy, delicious and healthy! I just use my spiralizer on the zucchini, toss them into my pan (also new, from All-Clad…this makes me feel Martha) and then I drizzle a little olive oil and pepper to heat up for a few minutes. I used my new Prep & Cook to make the pesto, recipe below:
2 cups packed fresh basil leaves
2 cloves garlic
1/4 cup pine nuts
2/3 cup extra-virgin olive oil, divided
Kosher salt and freshly ground black pepper, to taste
1/2 cup freshly grated Pecorino cheese
I then mix in the pesto with the zoodles, add a little feta on top, and then you have yourself a perfect lunch (I’d add a rustic baguette and some rosé to make it just perfect). This meal takes about 10 minutes prepping and cooking, it’s a breeze and foolproof!
So, in my humble opinion, I’m saving the best for last (brunch…I’m biased). How cute are these? They are so delicious and took me about ten minutes as well to put together. Make a few acai cups, throw some bread in the toaster with fun toppings, and maybe pour a mimosa or two. Sounds like my kind of Sunday! Recipe below:
I use this acai powder and mix it with half a cup of almond milk, 5 strawberries, a banana, and a handful of blueberries. Blend together and you have yourself delicious acai! Once the acai is ready to go, just slice up your favorite fruit to layer on top, sprinkle on granola, toasted coconut, almonds and drizzle a little honey. This one really hits the spot, you will love it! Also used my Prep & Cook to make the acai! So handy.
