During the week, I like to try and keep things pretty healthy. My favorite simple salad recipe has been on rotation for as long as I can remember for lunches. I’m always substituting seasonal greens, nuts, fruits and veggies, but the base has remained the same. I’ve grown quite fond of the easy dressing (olive oil, lemon, honey, mustard seed) paired with arugula or baby kale– and then whatever toppings I’m craving/are in season. This week we went with watermelon radish (just as good as it looks), avocado, fresh ground pepper, and almond slices.
It also made for the perfect snack (with a herb pizza bread I picked up from Marina Market– well there goes the healthy…) for a ladies night on Monday to watch the worst show ever (Bachelor…oy). So light and refreshing and paired nicely with some vino. IF you’re watching this season too…you get why it’s necessary for a glass.
Salad Dressing (for 2 people)
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp honey
1 tsp mustard seed
Two other combinations I’m currently loving right now:
grapefruit, candied walnuts, goat cheese
mandarin oranges (citrus season in full force), pine nuts, avocado
