Happy Tuesday! Hope your week is going well so far. I am feeling back to life again because the sun is out, and Scout is fully healed and back out on his walks again. That little guy has SO much energy, so needs several hours of playtime and running wild each day. He’s been so bummed not being able to go out after his surgery, so he’s a happy guy this week. I ALSO have been horrible about working out since I’ve had to play nurse. This week I have committed myself to a workout a day to get back into the swing of things. Plus, if you missed yesterday’s post… Hawaii is on the horizon, so it’s very necessary!
Anyways! Lately, with Matt working until 10 pm, I’ve realized that I need to be a bit more creative with my cooking. By 5 or 6 pm, I feel stumped on what to make, so decided I needed to change that. I don’t know about you, but I find that we fall into a meal repertoire of two to three options, which obviously becomes a bit mundane after awhile. I will go through phases of flipping through cookbooks to try new things but sometimes ingredient lists can sometimes overwhelm me, so I will resort to a delivery app. Trying to kick that bad habit!
Blue Apron recently reached out and offered to send me a few meals to try– which was quite fortuitous timing. I was happy to say yes, with Scout home (making it hard for grocery store visits during the week), and have to say…I have been absolutely loving it. One of my favorite meals they sent so far (which was so easy), was this Baked Ricotta Cannelloni, so I had to share.
I’ve never made pasta filled tubes before, but it was so simple and the flavors that came together blew me and my girlfriend away. Also, Blue Apron, you had me at ricotta. I think the one things that stand out to me the most about this service, is simply being able to learn new recipes.
